Sylvain Cathiard's 2.5-hectare Hautes Côtes de Nuits comes from Villers-La-Faye's Pièce Dame Marie lieu-dit, where two-thirds of vines were planted in 1973 and one-third in 2000 on deep clay soils using sustainable organic practices. Half the parcel is high-trellised at 3,500 vines per hectare, the other half low-trellised at 10,000 per hectare, creating density variation within the vineyard. Fully destemmed, macerated 20-30 days with five to six punchdowns, then aged 15-18 months in 20% new oak with 40-60 ppm total SO2 after malolactic, this Pinot Noir shows red cherry, earth, and forest floor with silky tannins and focused acidity that demonstrates Cathiard's precision even at the entry level.
