DOMAINE BARAT CHABLIS AOC 2023

Five generations of Chablis winemaking converge at Domaine Barat, founded by Michel and Joelle Barat in 1972 and now run with their children Angèle and Ludovic in the village of Milly. Ludovic farms the south-facing slopes organically, using herbicide-free fertilizers and green pruning on Kimmeridgian and Portlandian marl—ancient Jurassic seabed packed with marine fossils. This 2023 Chardonnay channels that fossil-rich clay-limestone terroir into bright green apple and citrus notes, a flinty mineral spine, and the steely acidity that defines great Chablis, finishing with a chalky, saline persistence.
