Dominique Guyon and granddaughter Hombeline operate 47 hectares in Savigny-les-Beaune, producing wines from 25+ Côte d'Or appellations with estate bottling. This Pinot Noir originates from 20 hectares of south-facing slopes in Meuilley near Nuits-Saint-Georges, where the Hautes Côtes de Nuits appellation benefits from higher elevation cooling and limestone soils. Hand-harvested grapes ferment 10-12 days in wooden open vats with punching down, then age 12 months in oak barrels, developing ruby-purple hues with small red fruit aromas, soft tannins, and creamy texture that pairs with red meats, roasted dishes, and cheese.
