DOM PARENT CORTON LES RENARDES 2021

Corton's Grand Cru plateau sits at the northern tip of the Côte de Beaune, where iron-rich red clay soils over limestone give the appellation its distinctively structured, savory Pinot Noir — and Domaine Parent, a Pommard estate with roots in the 17th century, farms a parcel in Les Renardes on its lower slopes. The 2021 was fully de-stemmed, a departure from their norm, and aged with 50% new French oak rather than the usual 100%. Blackberry, raspberry, pain d'épices, and bay leaf lead; the palate shows supple tannins and ends with white pepper.
