The Fayard family has farmed Château Sainte Marguerite ECOCERT-certified organic since 2003, working 75 hectares within the Côtes de Provence La Londe sub-zone, where schist and clay soils laced with flint flakes shape the wines. The estate holds Cru Classé status and practices massal selection to preserve old-vine genetic material — rare in Provence. Symphonie, first made in 1999, blends Grenache, Cinsault, and Rolle through cold skin maceration before pressing, then rests on fine lees in temperature-controlled vats. Pearly pink with white peach, passion fruit, grapefruit peel, and a saline finish.
