The Fayard family acquired Château Sainte Marguerite in 1977 and elevated it to Cru Classé status within the Côtes de Provence La Londe terroir, where schist and clay soils with flint flakes meet the Mediterranean climate. ECOCERT-certified organic since 2003 and registered with the Vegan Society, the 75-hectare estate practices massal selection to preserve old-vine genetic material — uncommon in Provence. Created in 1999, Symphonie blends Grenache, Cinsault, and Rolle (Vermentino) through cold skin maceration before pressing, then ages on fine lees in temperature-controlled vats. Pearly pink, with white flowers, white peach, passion fruit, grapefruit peel, and exotic fruit framed by delicate acidity and a saline finish.
