Les Mottelettes sits at the base of Bouzy's south-facing Grand Cru slope, where chalk-and-clay soils planted to certified organic Chardonnay in 1961 produce what Peter Liem has described as a distinctly different expression from the Côte des Blancs. Antoine and Quentin Paillard ferment on ambient yeasts in 350-liter barrels with full malolactic fermentation, aging 48 months on the lees before disgorgement at 3g/L, bottled unfined and unfiltered under cork. The 2020 delivers vivid citrus, white orchard fruit, and chalk-driven minerality with the mouthfilling richness that only 60-plus-year-old Bouzy Chardonnay can produce.
