Les Maillerettes is among Bouzy's most storied mid-slope parcels, its south-facing chalk-and-clay soils planted to certified organic Pinot Noir in 1970. Antoine and Quentin Paillard ferment the 2020 vintage on indigenous yeasts in 350-liter barrels with full malolactic fermentation, then age 48 months on the lees before disgorgement at 3g/L, bottled unfined and unfiltered under cork. The 2020 scores 96 points (Jeb Dunnuck): dark cherry, kirsch, and violet with an airy, pillowy mousse, weightless texture, and a long finish accented by iodine, saline, and mineral depth.
