Antoine and Quentin Paillard's Les Maillerettes sits on a south-facing mid-slope in Bouzy Grand Cru, chalk-and-clay soils planted to certified organic Pinot Noir in 1970. The 2020 is fermented on indigenous yeasts in 350-liter barrels with full malolactic conversion, then aged 48 months on the lees before disgorgement at 3g/L dosage, bottled unfined and unfiltered. Expect dark cherry, kirsch, and dried violet on the nose, a fine persistent mousse, and a finish marked by saline minerality and iodine.
