Brothers Antoine and Quentin Paillard are eighth-generation growers farming certified organic vines on Bouzy's south-facing Grand Cru chalk-and-clay slopes since 1768. Les Parcelles XIX blends 80% Pinot Noir and 20% Chardonnay sourced from three Bouzy lieux-dits—Les Maillerettes, Les Mignottes, and Les Mottelettes—off massal-selection vines over 55 years old. Fermented on indigenous yeasts in 350-liter barrels, aged 36 months on lees, then bottled unfined and unfiltered at 2g/L dosage. Tangerine zest, grapefruit, and nectarine lead into brioche and a concentrated, chalky finish.
