Brothers Antoine and Quentin Paillard represent the eighth generation of a family farming Bouzy's Grand Cru slopes since 1768—certified organic vines on south-facing chalk-and-clay soils that produce some of Champagne's most structured Pinot Noir. Les Parcelles XIX blends 80% Pinot Noir and 20% Chardonnay from three Bouzy lieux-dits—Les Maillerettes, Les Mignottes, and Les Mottelettes—with 55-plus-year-old massal-selection vines, fermented on indigenous yeasts in 350-liter barrels, aged 36 months on lees, and bottled unfined and unfiltered at 2g/L dosage.
