Drawn from Bouzy Grand Cru's oldest certified organic vines on south-facing chalk-and-clay slopes, La Grande Récolte is Pierre Paillard's prestige vintage cuvée—55% Pinot Noir and 45% Chardonnay from four old-vine parcels, fermented on indigenous yeasts in 350-liter barrels with full malolactic fermentation. The 2012 spent 120 months on the lees before disgorgement at 1g/L dosage, bottled unfined and unfiltered. Scoring 94 points (Wine Advocate): dried flowers, pear, brioche, and orange zest with bright acidity, firm chalky grip, and a precise mineral finish that shows only the earliest signs of maturity.
