Quentin and Marine Vincey founded this Demeter-certified biodynamic domaine in Oger, where massale-selection Chardonnay vines exceeding 50 years grow in pure chalk across southeast and northeast-facing Grand Cru parcels. Grapes are pressed in a 4,000-kilogram basket press without sulfur, fermented on ambient yeasts in barrel—15% new, made from local wood—with full malolactic fermentation, then aged 36 months on the lees before hand remuage and disgorgement at zero dosage and zero added SO2, bottled unfined and unfiltered. The 2021 scores 91 points (Jeb Dunnuck): Meyer lemon, pithy citrus, and saline with creamy depth and bright acidity. Drink 2025–2035.
