Since 2005, John Raytek's Ceritas Wines has crafted northern California coastal expressions through practicing organic farming partnerships. This 2022 Cabernet Sauvignon blends fruit from three mountain sites above 1,200 feet: Peter Martin Ray and Black Ridge vineyards in Santa Cruz Mountains' shale soils, plus Paratus Vineyard on Mt. Veeder's volcanic terrain. Native yeast fermentation in concrete vessels with gentle extraction precedes 36 months in 40% new French oak, yielding 13% alcohol with bright red fruit, mountain herb, mineral tension, and refined tannins that reflect the elevation and diverse soil composition of these coastal ridgeline vineyards.
