Celler de Capcanes, a cooperative founded in 1933 by village families in Capçanes, produces one of Spain's most respected kosher wines from certified organic vineyards in Montsant. Garnacha, Cariñena, and Cabernet Sauvignon grow on slate and clay soils, with Mediterranean heat tempered by elevation-driven diurnal swings that hold acidity in check.
