Sandy, calcareous soils on the Salento peninsula — Puglia's sun-baked heel, cooled by winds off both the Adriatic and Ionian seas — give Negroamaro its best shot at retaining freshness in a punishing Mediterranean climate. Castello Monaci, a sustainably certified estate with roots in a 16th-century castle, harvests the grapes at night to protect aromatics. The result is a dry rosé with red cherry, watermelon, and subtle floral lift, a clean mid-palate, and a crisp, saline finish typical of coastal Salento.
