Kosher Tempranillo at this price point usually means thin, early-drinking red — Ramon Cardova plays it differently. The label, named in homage to Maimonides' hometown of Córdoba, is the dedicated kosher line of Ramon Bilbao, sourcing 100% Tempranillo from old vines around Haro in Rioja Alta, where the Ebro River valley moderates continental heat. The 2021 earns its Crianza designation with 12 months in American oak and 6 months of bottle aging before release.
