BARBADILLO OLOROSO SHERRY

Aging under the Solera system — a fractional blending method where younger wine continuously refreshes older barrels — gives Barbadillo Oloroso its layered complexity without a fixed vintage. Unlike Fino or Manzanilla, Oloroso ages oxidatively, without flor yeast protection, concentrating the wine into a dry, full-bodied style. Barbadillo, founded in 1821 and based in Sanlúcar de Barrameda, makes this from 100% Palomino Fino grapes grown in Jerez's albariza — the chalk-rich, moisture-retaining soil central to the region. Expect toasted walnut, dried fig, and mahogany on the nose, with a silky, dry palate and a long, nutty finish.
