Cream Sherry is built on a solera system — stacked barrels where younger wine continuously tops older wine, producing remarkable consistency year after year without a single vintage. Barbadillo, based in Sanlúcar de Barrameda since 1821, blends Oloroso Sherry with naturally sweet Pedro Ximénez to produce this style, drawing on the town's Atlantic-influenced humidity that shapes how wine ages in the cask. Mahogany in color, it opens with caramel, nougat, and dried fig, with a silky mid-palate and a finish that lingers with toasted walnut.
