BAILEYS

Launched in 1974 by Gilbeys of Ireland and now produced by Diageo, Baileys invented the Irish cream liqueur category and remains its global benchmark. Production runs at two Irish facilities — Dublin and Mallusk, Northern Ireland — drawing fresh cream from 40,000 cows across 1,500 Irish dairy farms, processed by Glanbia in County Cavan. The cream is homogenised with triple-distilled pot-still Irish whiskey within hours of milking, forming a stable emulsion without added preservatives; cocoa and vanilla round the base. Baileys earned B Corp certification in 2022. Expect dark chocolate, latte, and a nutmeg-and-black-pepper finish.
