Austin Hope Winery sources Cabernet Sauvignon from sustainably farmed vineyards across Paso Robles' Creston and Estrella Districts, where ancient riverbeds deposited calcareous stones, decomposed bedrock, and gravel into loamy alluvial soils. These eastern sites benefit from warm days, afternoon winds, and cool nights that define Paso's signature Cabernet character. The 2023 vintage delivers aromas of black currant, blackberry, and violet with mocha and dried spice notes, while the palate balances dark fruit with black pepper, baking spices, and tobacco. Launched in 2017, Austin Hope's namesake Cabernet quickly became one of Paso Robles' most decorated wines.
