Asamai Shuzo practices true farm-to-table brewing in Tohoku, Japan's northernmost region, using only local Ginno-Sei and Miyama Nishiki rice, water, and labor from their prefecture. The name Ama No To means "Heaven's Door," honoring Amaterasu, the Shinto Sun Goddess who brought light to the world and cultivated Japan's first rice fields. This tokubetsu junmai at 15.7% ABV shows dried flower aromatics with baking spices that transition to savory, saline notes, delivering medium body with slight dryness and a clean finish that emphasizes pure rice character. Gluten-free, it complements game birds, pork ribs, wild mushrooms, and fermented foods.
