Albinea Canali cultivates Lambrusco di Sorbara in the deep, medium-textured lowland soils of Modena and Reggio Emilia provinces, where winemaker Iacopo Giannotti employs Geneva Double Curtain training for optimal fruit expression. This metodo ancestrale undergoes 12-hour cold maceration post-pressing, then completes secondary fermentation in bottle—leaving natural yeast sediment that pours into the glass as ancestors enjoyed. The completely dry (3g/L residual sugar) wine displays antique pink hues with creamy froth, wild rose and violet aromatics, raspberry and wild strawberry fruit, plus enveloping yeasty bread-soaked-in-wine notes, finishing with Sorbara's characteristic acidulous bite that pairs with cold cuts, tortellini, grilled meats, and pizza.
