This exquisite wine, crafted from 85% Cabernet Franc and 15% Cabernet Sauvignon, hails from the historic To Kalon Vineyard, where vines planted in 1979 thrive in deep, well-drained Coombs gravelly loam soils. Practicing organic and sustainable farming methods, including hand-harvesting and deficit irrigation, ensure the grapes reach their full potential. The winemaking process involves multiple small lot fermentations, with varying skin contact times to develop both complex flavors and fresh aromas. Aged for 18 months in French oak, this wine offers a delicious and supple experience. On the palate, it reveals a dense, lush texture with flavors of licorice, dark chocolate, currant, and fig preserves, all supported by a silky tannin structure.
