Israel's oldest continuously operating winery traces its roots to Jerusalem's Old City in 1848, though Yossi Shor relaunched the current estate in 2006 with Bordeaux-trained winemaking talent. This 2024 Cabernet Sauvignon draws fruit from Galilee, where limestone-rich soils and elevation deliver the structure that defines the region. Aged in French oak barrels, it's certified kosher and mevushal. Expect ripe blackberry, mint, vanilla, and tobacco on the nose, with a full-bodied palate and a long, persistent finish.
