Collection: Built to Last: American Mountain Cabernet for the 250th 🇺🇸

On July 4, 2026, the United States turns 250 — and few things mark the moment better than American wine built to outlast it. These four California Cabernets all come from mountains, not the valley floor: Knights Valley, Howell Mountain, Mount Veeder, and Diamond Mountain. Each estate carries a piece of American wine history, from the 1862 hillside that became Napa's first vineyard to the 1971 bottle poured at the Judgment of Paris. Each is grown on volcanic, high-elevation soil that yields small crops of dense, structured fruit. And each is built to age for decades. Best of all for a milestone year, every bottle here lands under $250.
The Peter Michael Les Pavots 2020 comes from volcanic ridges Sir Peter Michael bought in 1982 on the western face of Mount St. Helena. The Les Pavots vineyard, planted in 1989, climbs to nearly 1,400 feet on rocky rhyolite soil. Winemaker Robert Fiore works toward elegance rather than power, fermenting with native yeasts after triple hand-sorting. The 2020 is unusual: wildfire smoke forced the team to drop Cabernet Franc entirely, so the blend runs 83% Cabernet Sauvignon, 14% Merlot, and 3% Petit Verdot. Eighteen months in French oak frame aromas of blackberry, crème de cassis, dried rose petal, and graphite. The palate carries black tea and dark chocolate over fine-grained tannins to a long, savory close. James Suckling scored it 97 points. Pour it with a peppercorn-crusted dry-aged ribeye — the firm tannins scour rendered fat while graphite and black-tea notes track the charred crust.
The Dunn Vineyards Howell Mountain Cabernet Sauvignon 2019 is the wine that made its mountain famous. Randy Dunn left Caymus and planted Howell Mountain in 1979, then helped define the AVA in 1983. His estate vineyards sit between 1,800 and 2,100 feet on shallow volcanic soil — iron-rich red clay, tufa, and red sandstone — yielding about half the crop of the valley floor. The result is 100% estate Cabernet of unusual structure and restraint, held to roughly 13.9% alcohol. Thirty-two months in French oak shape crème de cassis, crushed plum, graphite, and scorched earth, with cast iron and smoldering tobacco beneath grippy tannins. Vinous gave it 98 points, and Wine Spectator named it the #6 wine of 2023. Serve it with red-wine-braised short ribs — the gelatin-rich sauce buffers the dense tannins, while iron and tobacco notes echo the deeply browned meat.
The Mayacamas Cabernet Sauvignon Mount Veeder 2019 ages in a stone cellar cut into a dormant volcano crater in 1889. Bob Travers bought the estate in 1968, and his 1971 Cabernet was poured at the 1976 Judgment of Paris. The method has barely changed since. Grapes grow 1,800 to 2,400 feet up Mount Veeder, on volcanic deposits over ancient fossilized seabed that keep acidity high. The 2019 is 100% Cabernet, fermented in concrete and steel, then aged 20 months in large foudres and 14 in neutral barrique — very little new oak. Expect lilac, dried sage, graphite, and wild blueberry, with maraschino cherry, sassafras, and bay leaf carried on bright acidity and iron-laced tannins. Vinous rated it 97 points. Pair it with rosemary-studded roast leg of lamb — the bright acidity slices through the fat, and the bay-leaf and sassafras tones lock onto the resinous herbs.
The J. Davies Cabernet Sauvignon Diamond Mountain District 2019 grows on the oldest hillside vines in Napa, first planted by Jacob Schram in 1862. Jack and Jamie Davies revived the estate in 1965 and pioneered American méthode-traditionnelle sparkling wine. Their son Hugh Davies replanted the Diamond Mountain slopes to Bordeaux reds in the 1990s and named this Cabernet for his father. Fruit comes from four blocks between 500 and 1,000 feet, including the original 1862 Schram sections. The blend carries about 10% estate Malbec with small amounts of Petit Verdot and Merlot, per Wine Enthusiast. Roughly 30 months in French oak build blueberry, black cherry, boysenberry, cocoa, and espresso over supple, mouth-filling tannins. Wine Enthusiast scored it 93 points. Pour it with a coffee-rubbed brisket — the espresso and cocoa notes mirror the spice crust, and the supple tannins handle the smoky fat.
