The traditional method starts with hand-harvested grapes pressed pneumatically to separate press fractions. The juice ferments in stainless steel after settling. Once fermentation completes, the base wines are blended, bottled with sugar/yeast for secondary fermentation creating the mousse. Bottles age sur lie at least 12 months at 12-15°C, then are riddled, disgorged, and a liqueur d'expedition is added before corking. The wine shows a brilliant pale color with a fine perlage. The expressive nose offers white fruits like apple and citrus, fresh herbs, ripe pear, quince and ginger notes. The palate mirrors the nose with orchard fruit, citrus, quince, pineapple, rock candy sweetness and an herbal anise/mint note. The balanced finish sees fruit persisting with the discreet sweetness suggesting pairings like terrine, rillettes or shrimp over oysters.
