Domaine du Roc des Boutires is a winery located in the heart of Pouilly-Fuissé, Burgundy, France. The winery's name pays homage to its proximity to the Roche de Solutré, a iconic landmark in the appellation, and its settlement in the esteemed terroir of "Aux Bouthières". This terroir has a rich history, with its name derived from the ancient French term for a secondary road used by mule skinners to transport goods. The winery is committed to showcasing the unique characteristics of this terroir through its wines.

Pouilly-Fuissé Aux Bouthières is a white wine made from 75-year-old vines grown in deep, clay-rich soils with pieces of shale. The wine is aged for 15 months, with 50% in stainless steel tanks and 50% in oak, resulting in a round and rich flavor profile with nice lemon notes on the finish. The winemaking process involves whole bunch pressing, slow fermentation, and malolactic fermentation, yielding a complex and refined wine. With its Premier Cru classification in 2020, this wine is a testament to the winery's dedication to quality and tradition.

It has a nuanced nose, understated at first, opening with yellow plum, jasmine and crushed rock scents, showing very good delineation. The palate is well balanced, the oak neatly integrated and subtly, allowing the texture to shine through. There’s plenty of energy here. This is precise on the finish, and it will age very well in bottle...If you can resist the temptation.
