Keith Hazelbaker acquired Prohibition Craft Spirits Distilling Company in 2016, turning it into a family venture with his sons Carson and Chase. The Louisville, Kentucky-based distillery focuses on American whiskey, launching NULU Whiskey in 2019, a lineup of sourced bourbon featuring single barrels, blends, and finishes. Named after "New Louisville," NULU reflects the East Market Street neighborhood's spirit, combining Kentucky's rich history with a renewed emphasis on craft and community. The company's transparency and skill in creating balanced blends make NULU a noteworthy range of bourbons.
NULU's core bourbon showcases the brand's blending expertise, featuring a small-batch blend of carefully selected barrels from MGP in Indiana. The bourbon, aged for 6 years in new American oak barrels, may utilize two mash bills for any given batch: 75% corn, 21% rye, 4% malted barley, or 60% corn, 36% rye, 4% malted barley. On the nose, green apple skin and green cardamom entice, while the palate reveals lemon and peanut skin with a consistent orchard fruit presence. The finish, reminiscent of arugula, lovage, and bitter cacao, gracefully transitions into the creamy, tart interplay of a Golden Delicious apple. Non-chill filtered and bottled at a varying ABV between 50% and 57%, this bourbon offers an incredibly sessionable and nuanced sipping experience.
