The requirements to be classified as an Empire Rye whiskey are quite stringent. The majority of the grains used in the mash, at least 75%, must be cultivated within the state of New York. The distillation process is capped at a maximum of 160 proof. Aging must occur in newly charred oak barrels for a minimum of two years, with the spirit entering the barrel at no more than 115 proof. Furthermore, the entire production process - mashing, fermentation, distillation, barreling, and aging - must take place within a single distillery located in New York State. These regulations ensure that Empire Rye whiskeys truly capture the terroir and craftsmanship unique to New York.
