DETERT CABERNET SAUVIGNON 2021

This distinguished wine, composed of 95% Cabernet Sauvignon and 5% Cabernet Franc, originates from the renowned To Kalon Vineyard. The vines, planted in 1997 and partially grafted in 2015, are rooted in deep, well-drained Coombs gravelly loam soils. Adhering to organic and sustainable farming practices, including hand-harvesting and deficit irrigation, the grapes are carefully tended to ensure optimal quality. The winemaking process involves small lot fermentations with an average of 14 days on the skins, followed by 18 months of aging in French oak barrels. The resulting wine showcases a captivating array of aromas and flavors, including graphite, mineral, plum, cassis, dark fruits, and dark chocolate. On the palate, it presents a broad and penetrating profile with an energetic core of mineral, black cherry, and savory herb notes. The wine s fantastic texture, length, and beautifully integrated tannins contribute to a long, complex finish, offering a classic character with remarkable depth and detail.
