Domaine du Nozay, located in Saint-Gemme, the northernmost village of Sancerre, crafts a unique Sancerre that emphasizes the region s deeper limestone terroir shared with Burgundy. Cyril practices certified organic and biodynamic viticulture, fermenting each parcel of their 15-hectare estate with indigenous yeast in egg-shaped tanks. Ripened fruit is used for other cuvées, but the most mineral-driven and tense lots are bottled as the estate Sancerre, resulting in a wine of uncommon focus and delineation. This Vin de France offering boasts a luminous golden yellow color, hinting at its richness on the palate. The wine displays good length with balanced acidity, supported by a supple tannic structure. The nose offers delicate aromas of white flowers and citrus fruits, accented by subtle salty notes derived from oak aging.
