IRON + SAND CABERNET SAUVIGNON 2021

Iron + Sand Cabernet Sauvignon emerges from Paso Robles' distinctive terroir where sturdy iron trellising supports vines rooted in alluvial, well-drained sandy soils—elements reflected in both the wine's name and its character. This sustainably farmed Cabernet Sauvignon, sourced predominantly from two vineyards within the Paso Robles AVA, is crafted by winemaker Lee Miyamura using neutral oak to showcase the region's natural expression. Dense purple in color, the wine presents a velvety, lush palate of black cherry and blackberry flavors with intriguing undertones of coffee and mocha. Aromas of dark red fruit, blueberry, cassis, and cola emerge with subtle baking spice notes, while lively acidity and fine tannins provide structure and suggest excellent aging potential, culminating in a long, supple, mouthwatering finish that pairs beautifully with Santa Maria style BBQ or slow-braised short ribs.
