In Italy's renowned Piedmont region, La Scolca produces their flagship Gavi dei Gavi from 60+ year-old Cortese vines planted on steep hillsides in the premier "Grand Cru" terroir of Rovereto Superiore. The estate's calcareous-clay soils with volcanic elements and chalky limestone veins (similar to Champagne and Chablis) impart a distinctive mineral character to their wines. Following sustainable farming practices that adhere to European Union Regulation 2078/92, the Soldati family pioneered modern vinification techniques including cryo-maceration and cold fermentation with natural yeasts to preserve the grape's delicate characteristics. The resulting wine presents a pale straw color with greenish highlights, offering intense floral and fruit aromas that develop into a structured palate with characteristic flinty notes and an elegant finish of almonds and hazelnuts.
