The Mori family has been making wine in southern Tuscany for centuries, but it was Giacomo Mori and his brother in the 1970s who put a renewed focus on quality. They increased grapevine density, implemented trellising for lower yields, and rebuilt the cellar. Their Chianti grapes grow in clay, limestone, and sandy soils and are vinified in stainless steel vats before aging in a cool, natural grotto carved from volcanic rock. This unique aging process helps preserve the wine's character and elegance. The family is currently transitioning to organic farming practices.
