Robert Groffier is a renowned winemaker in the Cote d'Or, with three generations involved in the domaine. His son Serge and grandson Nicolas now run the estate, producing wines known for their depth, charm, power, and structure. With seven hectares of top vineyard land, including Chambolle-Musigny, Bonnes Mares, and Chambertin Clos de Beze, they have excellent material to work with. The domaine's wines are made using a combination of traditional and modern techniques, including cold maceration, hot fermentation, and careful use of oak aging. The Groffiers prefer to plant clones and use a gentle approach to winemaking, resulting in wines with impressive finesse and harmonious tannins. The estate's recent vintages have reduced the use of new oak, and the type of oak used has also changed to gentler Nevers and Allier.
The 2019 Bourgogne Passetoutgrains has a perfumed, floral bouquet with peony and iris flower permeating the lifted red fruit. The palate is medium-bodied with slightly chewy tannins, fine acidity with gentle grip on the finish. Maybe a bit "glou-glou" but hey, there is no reason why a Passtoutgrains shouldn't be!
