Olivier Leflaive is a family-run winery in Burgundy, France, established in 1984. They are dedicated to crafting high-quality wines while respecting the land and Burgundian traditions. Their philosophy emphasizes teamwork and a commitment to sharing their passion for wine with others. This is evident in their creation of a hospitality experience that allows guests to fully immerse themselves in the world of Burgundy wine.
This 2022 Bourgogne rouge draws from approximately twenty diverse plots spanning the Côte de Beaune, from Santenay to Pernand-Vergelesses. The vintage, marked by exceptional sunshine and moderate rainfall, yielded healthy fruit with proper volumes despite early April frost concerns. The 30-year-old Pinot Noir vines, rooted in silty clay soils at elevations of 230-250m, are hand-harvested and completely destemmed before undergoing a 15-20 day fermentation in open vats. Following this, the wine matures for 16 months, with 80% in oak barrels (15% new) and the remainder completing its evolution in stainless steel. The resulting wine showcases dominant notes of black fruits and raspberry, supported by a structured palate with subtle tannins. This classic Burgundian expression pairs particularly well with regional specialties like parsley ham or pâté en croûte.
