From Saint-Aubin's historic terroir, replanted in the 1970s following the phylloxera crisis, this 2022 Chardonnay benefits from a unique microclimate where limestone soils retain summer heat overnight and provide natural frost protection near Montrachet. The vintage brought welcome serenity with healthy yields despite higher-than-normal temperatures and sunshine levels equivalent to an extra month of July. Harvested manually from 26-year-old vines at 250-300 meters elevation, the whole clusters underwent both alcoholic and malolactic fermentation in oak barrels, followed by 12 months aging (15% new oak) with a final 4 months in stainless steel. This mineral-driven wine displays elegant notes of white flowers and acacia, offering a fresh and delicate palate with remarkable finesse. It pairs beautifully with delicate dishes such as scallop carpaccio with citrus and olive oil or foie gras accompanied by lime zest and candied dates.
