This Franciacorta is a blend of 85% Chardonnay with an average vine age of 15 years, and 15% Pinot Nero from vines averaging 10 years old. The grapes undergo a soft pressing, with fermentation taking place in a combination of stainless steel tanks and small oak casks at controlled temperatures. The wine is then kept in contact with the lees, undergoing batonnage (lees stirring), before being prepared for secondary fermentation in bottle where it ages sur lie for a minimum of 24 months. This extended aging on the lees allows for development of the signature toasty, brioche notes that distinguish fine Franciacorta from basic sparkling wine. The extended lees contact also contributes a creamy textural richness to complement the bright citrus and orchard fruit flavors characteristic of the traditional Franciacorta blend.
