Hand-selected, spontaneously fermented, 6 weeks on the skins, 12 months matured on the fine yeast in oak barrels, filled unfiltered. Intense herbal spice, black pepper, tea leaves, dried tobacco, spicy and mineral with a powerful tannin structure.
