Founded in 1856, the Holladay Distillery stands as the oldest operational distillery west of the Mississippi River still producing on its original site in Weston, Missouri. The distillery's location was strategically chosen for its active limestone springs, first documented by Lewis and Clark in 1804, which provide ideal conditions for bourbon production. As a certified Real Missouri Bourbon under 2019 legislation, the distillery upholds strict standards, requiring all aspects of production—from mashing to bottling—to occur within state borders, using Missouri-grown corn and state-manufactured oak barrels.
