Olivier Leflaive, a renowned family-run winery in Burgundy, France, has been dedicated to producing high-quality wines while respecting the land and Burgundian traditions since its establishment in 1984. The winery's commitment to excellence is exemplified in their Pernand-Vergelesses cuvée, which showcases the unique terroir of this appellation. Pernand-Vergelesses, meaning "the source that gets lost," is presented in the form of an amphitheater, offering a stunning backdrop for the vineyards.

The Pernand-Vergelesses 2021 is a testament to the resilience and skill of Olivier Leflaive's winemaking team. Despite the challenging weather conditions throughout the year, including severe frost episodes and fluctuating temperatures, the grapes were harvested at optimal ripeness on September 20th. This cuvée is sourced from the clayey limestone soils with crushed stones and rock found in the terroirs of Frétille, Sous les Clous, Les Courbettes, and Les Pins, located at the end of the northern part of la Butte de Corton. The grapes are picked later than elsewhere, allowing for a perfect balance of ripeness and acidity. The vinification process involves 50% crushed grapes and 50% whole grapes, with a 24-hour static settling followed by alcoholic and malolactic fermentations in oak barrels. The wine is aged for 12 months (including 5 months in stainless steel tanks) in 100% oak barrels, 18% of which are new, resulting in a final alcohol content of 12.85% vol. On the nose, the Pernand-Vergelesses 2021 offers enticing aromas of hawthorn and acacia, which evolve with age to amber, honey, and spices. The palate is harmonious and pleasant, making it an ideal pairing for pork chops with mustard, guinea fowl legs, or Bleu de Bresse cheese.
