Domaine Christian Moreau is a historic name in Chablis, with the Moreau family tending vines there since 1814. Today, the sixth generation winemaker, Fabien Moreau, crafts exceptional wines that showcase the region's prized Chardonnay grapes. The Domaine is certified organic, ensuring sustainable viticulture and minimal intervention in the winemaking process.
This Premier Cru Chablis hails from the Domaine’s esteemed Vaillon holdings. The vines, some planted in 1933, benefit from the region’s unique Kimmeridgian limestone soils rich in marine fossils. Aged partially in oak barrels, the 2021 Vaillon offers a captivating bouquet of white flowers with a hint of lees. On the palate, expect a delightful balance of crisp acidity with juicy white peach and blood orange notes, culminating in a lingering, harmonious finish. This is a wine best enjoyed after a year in bottle, allowing its complexities to further develop.
Racked three weeks before my visit, the 2021 Chablis Vaillon 1er Cru is 40% fermented in barrel due to the lower volume, with everything now transferred into tank. It has a slightly leesy bouquet with subtle pressed flower scents. The palate is well-balanced with a fine bead of acidity, lovely white peach and blood orange notes and a lilting, harmonious finish. Give it a year in bottle.
From 4.8 ha (11.9 acres) divided across 6 parcels. Kimmeridgian soils rich in tiny fossilised oyster shells. Average age of the vines is 48 years; the youngest 37, the oldest 78. 40% barrel-fermented (2–5% new oak barrels, the remainder second, third and fourth use), 60% in steel. Tank sample.
Clean, fresh nose of citrus, apple and lemon. A richer breath of oak on the palate and leesy notes, even a little chewy on the finish. But it’s well done. Not austere at all. (MH)
