Fanny Sabre took over her family's domaine in the Côtes de Beaune at the age of 22 in 2005, following a period of organic farming and natural winemaking under Philippe Pacalet. Today, she manages 4.5 hectares, producing small-batch wines from various appellations including Savigny, Aloxe, Beaune, Pommard, Volnay, Monthelie, and Meursault, as well as Aligoté and Bourgogne Rouge & Blanc. While initially adhering to Pacalet's natural style, Fanny has gradually refined her techniques to better express terroir. Her whites are gently pressed and naturally fermented in oak barrels, while her reds undergo traditional maceration with stems. The resulting wines are known for their precision, persistence, and early drinkability.
She has recently added the Clos des Renardes vineyard to her portfolio, showcasing her expertise with Pinot Noir on its clay and limestone soils. The winemaking process involves a brief maceration in stainless steel, followed by fermentation and aging in used oak barrels. The result is an elegant wine that, while enjoyable now, promises to improve with short-term cellaring. This new addition to Sabre's lineup is further distinguished by its striking new label design.
