A more complex and more deeply pitched nose combines notes of cassis, dark cherry and notably more earth influence along with discreet wood nuances. The slightly more concentrated, though notably more powerful, medium weight flavors display good length on the dusty, balanced and compact finale. Unlike the first two wines that could reasonably be approached young, this will need at least a few years of keeping first.
Producer Note: Producer note: The soft-spoken Dominique Gallois runs this small 3.5 ha domaine proudly told me that 2022 represented his 33rd, and last, vintage at the head of the domaine he founded in 1989. While he will still be present, he is stepping away in favor of his wife and sons. Nonetheless, he briefly noted that 2022 gave us "a hot and dry growing season without much drama save for a massive rain and hailstorm in late June that definitely cost us some yield in Combe Aux Moines, though only at the top! We picked from the 31st of August and, Combe Aux Moines aside, brought in good yields of between 35 and 40 hl/ha with excellent potential alcohols that ranged from 13.5 to 14%. We did a 15-day cuvaison and had to trouble with the vinifications finishing their sugars. The wines have really changed as they've gone through their élevage in that they've become fresher and more tension-filled. They should age gracefully yet be approachable young as the tannins are ripe and the acidities are on the lower side." Gallois also noted that, like a number of domaines in Burgundy, they have begun using corks that are guaranteed against TCA (cork taint).
