This bottling showcases Pinot Noir from the historic, yet often overlooked, Côte de Grisey in Burgundy.
These grapes are organically farmed on southeast-facing slopes, some as steep as 45 degrees! The vines dig their roots into thin Kimmeridgian clay-limestone topsoil, which imparts a distinctive minerality to the wine.
Domaine Gruhier ferments this Pinot Noir with 20-30% whole clusters, a technique that enhances the wine's structure and fruit expression. Following fermentation, the wine ages for 8-11 months in a combination of 228L and 400L barrels, some of which are new.
