This truly small-batch spirit begins with traditionally grown corn, rye, and malted barley. All staple grains are cultivated exclusively for the distillery on the Omlin Family farm in Quincy, Washington. The grains are mashed and distilled in the Woodinville distillery, then transported back over the Cascade Mountains to private barrel houses. There, Central Washington's extreme temperature cycles promote the extraction of natural flavors from the oak.
Once the whiskey is fully mature, it is transferred into 200-gallon Moscatel de Setúbal barrels. This rare wine is produced on Portugal's Setúbal Peninsula, a region known for its ideal climate for such wines. This "finishing" process adds notes of dried apricot and orange peel, with a honey and toffee sweetness.
The final product presents aromas of candied nuts and a hint of fennel, leading to a lingering finish.
