Bedford Cellars is a family owned wine production company committed to developing relationships and creating labels that last. They seek to bottle wines from California's best appellations. The goal today remains: wines that are accessible and over deliver in value.
From a prestigious vineyard in the Mayacamas mountain range separating Sonoma County and Napa Valley, this Cabernet originates from California's premier heritage clone vines. The vineyard's iron-rich, loamy soils and volcanic influence create ideal growing conditions. Harvested at peak ripeness in the early morning hours, the fruit undergoes a 14-day fermentation in stainless steel tanks before aging in 50% new French oak. The wine displays an alluring dark purple and garnet hue, offering aromas of blackberry, ripe red fruits, and sweet oak. On the palate, mocha powder mingles with spice and dark fruits, creating a wine that pairs excellently with BBQ ribs or lamb chops.
