Sourced from the elevated volcanic soils of Red Hill, where higher UV exposure exceeds neighboring valleys by up to 10%, this Cabernet is harvested at optimal ripeness in the early morning hours. The pristine mountain air and distinctive terroir contribute to the wine's pronounced dried red fruit character. Following harvest, the grapes are destemmed and fermented in stainless steel for 14 days before aging in 50% new French oak. The resulting wine exhibits enticing aromas of dried cranberry and cherry, complemented by mocha spice notes from the oak aging. On the palate, rich dark fruits mingle with baking spices and sweet oak, leading to a persistent finish. This elegant Cabernet shows particularly well alongside filet mignon or braised lamb shanks.
