Mifuku Brewery creates artisanal sake using a blend of traditional methods like yamahai and modern techniques developed for ginjo sake production. Their Sanrensei line, launched to commemorate 100 years of brewing and three generations of brewers, features nine varieties of sake. The line is structured around the number three: it includes three premium sake grades (junmai, junmai ginjo, junmai daiginjo), each made with one of three renowned Shiga prefecture rice varieties. Each grade offers a standard product, a limited edition, and a seasonal release.

The Sanrensei series' regular "white" bottle is a junmai ginjo sake crafted from Shiga prefecture's Yamadanishiki rice. This namazume sake has undergone single pasteurization and is characterized by its well-balanced aroma and flavor profile. It's classified as an undiluted junmai ginjo namazume genshu, with a pale lemon hue. The tasting notes reveal a pleasant aroma of green apple, steamed rice, and subtle strawberry blossoms, followed by a clean, dense, and dry palate with herbal and spicy undertones in the finish. This sake pairs well with grilled fish, fish cakes, vegetable-accompanied hummus, and various hotpot dishes (nabe).
