The other two come from the Côte de Beaune but climb for their freshness — one perched above Le Montrachet, one on the cool hillsides above the Côte proper. He farms organically and inherited his first plots from his uncle, Pierre Boillot. In the cellar he uses natural yeasts and around 20% new oak, keeping wood in the background.
