He took over the estate with his wife Céline in 1994 and was named Bourgogne Aujourd'hui Winemaker of the Year in 2013. Les Doues is east-facing, planted on limestone and clay, and farmed organically. Whole clusters and indigenous yeasts drive fermentation before 12 months in barrel with 33% new oak and a further 6 months in tank. Bottled unfined and unfiltered.
